Entry Proof
Entry proof (or barrel-entry proof) is the proof at which new-make spirit is filled into the barrel for aging. In the U.S., bourbon must enter the barrel at no more than 125 proof.
Entry proof affects how a spirit extracts flavor from the wood and how it loses volume versus proof over time. Recording entry proof on each fill is the starting point for tracking maturation, loss, and value across the barrel's life.
