High Wines
High wines are the higher-proof spirit produced by redistilling low wines. They represent the concentrated alcohol from which the final hearts cut is taken.
High wines come off the second (or spirit) distillation at a much higher proof than low wines. From them the distiller makes the final heads, hearts, and tails cut. Recording high-wines proof and volume closes the loop on still yield before barreling.
