New-Make Spirit (White Dog)

New-make spirit, also called white dog, is the clear, unaged distillate that comes off the still before it goes into a barrel to mature.

New-make carries the raw character of the mashbill and fermentation. Its volume and proof at the still and at barrel fill are key data points for yield, costing, and compliance, since aging begins the moment it enters the barrel.
